Green Coffee Beans

Coffee is mainly produced from two out of over one hundred species in the Coffea genus, Coffea arabica and Coffea canephora that account for 99% of global coffee production. Coffee fruits, cherry-like, are harvested, processed via a dry or wet method, and converted to green coffee beans. The main components include TRG and CGA. Coffee consumption has many health-promoting effects such as decreasing the risk of type 2 diabetes, protecting essential organs like heart through antioxidative effects.

Fenugreek Seeds

Fenugreek, Trigonella foenum-graecum, is an herbaceous and annual plant that produces fawn yellow to brown seeds. Fenugreek has been used as dietary component for health benefits and as a medicinal plant for more than 4,000 years. The main ingredients are steroidal saponins, alkaloids, mucilage, and fibers, in which the bioactive compounds include TRG and CGA. Fenegreek consumption has been reported with many health effects, for example, lower blood glucose level and help control diabetes.

Trigonelline

Trigonelline (1-methylpyridin-1-ium-3-carboxylate, TRG), a natural polar hydrophilic alkaloid, was first isolated from fenugreek seeds (Trigonella foenum-graecum L.), also found abundant in green coffee beans but low in roasted coffee. Green coffee beans contain high concentration of CGA, but exposure to heat in the roasting process significantly decreases the CGA content.
